The key to success with home made nut butters? Roast the nuts yourself (for about 15 minutes at 220* – turning them over halfway through and keeping a close eye on them)… and PATIENCE.

ingredients (makes 1 cup nut butter)

  • 2 cups home roasted almonds
  • pinch of salt

Method

  • pop the almonds in the blender
  • blend on medium/high for about 10 minutes, or until creamy – scrape down the sides often (every 30 seconds or so)

ingredients for crust

  • 1 cup almonds
  • 1T butter (melted)
  • 1T honey
  • 1/4 cup sunflower butter (or almond butter)
  • if using sunflower butter – 1/4t cream of tartar (this prevents the sunflower butter turning green when you cook it)
  • 1/2t salt
  • 1/2t baking powder

directions for crust

  • Preheat oven to 170*
  • In a blender combine everything and blend until it’s all come together

  • Press into a lined pie dish
  • Poke a few holes in the crust with a fork
  • Bake for 10 minutes

ingredients for filling

  • 3 large eggs
  • 1/2 cup honey
  • 1/3 – 1/2 cup lemon juice
  • 2.5T coconut flour
  • 1/2t salt

directions for filling

  • Mix all the ingredients together and stir / mix in a processor until all well combined
  • Pour onto baked crust
