ingredients
- 1 egg
- 1/2 c xylitol
- 1 c roasted almond butter
- 1 t pure vanilla essence
- ¼ t salt
- ¼ c nut dust (or coconut flour / almond flour)
- 1 t. baking powder
- 1/2 slab dark chocolate, cut into chunks
- 1/2 c chopped nuts (I used almonds)
instructions
- Preheat the oven to 170 degrees C. Line a cookie sheet with parchment paper
- In a large mixing bowl, combine the egg, xylitol, almond butter, vanilla, and salt, mixing until just combined
- Stir in the flour and baking powder until a dough begins to form
- Fold in the chocolate chips and nuts
- Roll the dough into heaping tablespoon sized balls. Place each piece of dough onto the prepared baking sheet and flatten slightly using the palm of your hand
- Cover the tray with plastic wrap and refrigerate for 1 hour
- Bake the biscuits for 8 minutes
- Let them cool a bit, then transfer to a rack

This is the greatest recipe I have in my shed, but HELLISHLY pricey!
* I used to have coconut sugar OR xylitol, but I’ve realised coconut sugar is a total NO NO!

I would rather use vanilla extract as apposed to vanilla essence, which is readilly available these days.

It’s fine in small doses (from what I understand). But if you’d prefer, use Xylitol, it’s just as good!

Make your own, you could even use sunflower seeds!

My cookies were a disaster! Maybe 1 cup of macadamia nut butter was too much? I’m not sure. There was nothing biscuity about my batch. Maybe 40min the freezer was a bad idea on my part?
When they got into the oven they just “melted” together into one large “cake”.

HI Mpho, I’m so sorry they flopped 😦 Yes, I would definitely stick to freezing them for an hour, it really makes a difference. Was the nut butter you used very oily? Was it just 100% nuts (with no added oil)?

Yes you can use whichever nut butter you like, the quantity will depend on the size you make each biscuit!

I am definatly trying this tonight but using mixed chopped nuts. I am combining this with a german recipe i have and cant wait to taste the result. Brown sugar in stead of xilatol also works just as well.

small quantities of dark chocolate (70% and above) are find if used sparingly
