chocolate sweet potato cake

Ingredients:

  • 50g dark chocolate
  • a tiny pinch of salt
  • 3 T cream
  • 1/2 c xylitol
  • 3 eggs
  • 100ml coconut oil (melted)
  • 100ml olive oil
  • 2 T honey
  • 1 cup mashed sweet potato
  • 3 T of cocoa
  • 1 t bicarb
  • 1 teaspoon baking powder
  • 1 c flaxseed flour

Directions

  • Heat the oven to 150*c
  • Combine the 3T cream, salt and chocolate and melt over a low heat
  • In a separate bowl beat the xylitol, eggs, coconut oil, olive oil and honey for about 2 minutes
  • Add the sweet potato and beat until smooth
  • Slowly add the cocoa, bicarb, baking powder and powder, and mix until smooth
  • Pour into a greased cake tin (I use my silicone one as it’s so easy to get the cake out)
  • Cook for 40 minutes
  • Top the cake with chocolate ganache (the other half of the chocolate slab mixed with some cream) or a sour cream frosting with a little lemon juice and sweetened with some xylitol.
