sunflower seed flour crumpets



  • 1 cup sunflower seed flour
  • 2 eggs
  • 1/4 c xylitol
  • 1 c milk
  • 2 T melted butter
  • 4t baking powder
  • small pinch of salt


  • Beat the eggs, adding the xylitol
  • Add half the milk and the melted butter and whisk together
  • Add flour, baking powder and salt and mix well
  • Gently stir in the rest of the milk and mix until you have a smooth batter
  • Drop spoonfuls of batter onto a medium hot pan, and turn once bubbles form on the top
  • Serve with full cream yoghurt and strawberries10616691_330618353729537_8515426816994429259_n
