I have made sorbet in the past, but it’s always been missing something. I just realised what that something was… an egg white.

ingredients
- 400g frozen berries
- 2T xylitol dissolved in 1/4 cup boiling water
- squeeze of lemon juice
- 1 egg white
I added two egg whites, but I beat them until they were very stiff and then folded them in. You get a brilliant light and fluffy sorbet and it goes further
