avo and honey ice cream

Ingredients:

  • 2 eggs
  • 1 cups full cream milk
  • 1/2 cup coconut milk
  • 1 T vanilla essence
  • 1/4 cup xylitol
  • 1 1/2 cups double thick cream
  • 2 ripe avocados
  • 2 T honey

Directions:

  • Add eggs, milk, vanilla essence and xylitol to a pan on the stove
  • Whisk over low-medium heat until it just forms a custard *this won’t be very thick
  • Add cream and blend in a mixer
  • Add avos and blend
  • Add the honey and blend more
  • Freeze the ice cream – I left mine in overnight and put it in an “ice bath” around the container
