Ingredients:
- 2 eggs
- 1 cups full cream milk
- 1/2 cup coconut milk
- 1 T vanilla essence
- 1/4 cup xylitol
- 1 1/2 cups double thick cream
- 2 ripe avocados
- 2 T honey
Directions:
- Add eggs, milk, vanilla essence and xylitol to a pan on the stove
- Whisk over low-medium heat until it just forms a custard *this won’t be very thick
- Add cream and blend in a mixer
- Add avos and blend
- Add the honey and blend more
- Freeze the ice cream – I left mine in overnight and put it in an “ice bath” around the container
