Total time: 20 mins
Serves: 2


  • 1 packet courgettes, washed and cut into julienne strips
  • 2 chicken breasts, sliced into strips
  • 2 T butter
  • 2 eggs (beaten)
  • 1 bunch sprouts
  • 2 T chopped cashew nuts
  • 1/2 bunch coriander
  • 2 T fish sauce
  • 2 T lime  juice
  • 1 T xylitol


  1. Mix the fish sauce, lime juice and xylitol together and set aside
  2. Steam the courgette strips until soft-ish
  3. On a medium high heat, melt the butter in a large frying pan
  4. Add the chicken, and fry on one side until about 3/4 cooked through
  5. Add the sauce mixed in step 1
  6. Turn the chicken, and add the eggs
  7. Scramble the eggs in the pan
  8. Add the courgettes, coriander, sprouts and cashew nuts and serve
